Oil-free, Gluten free, Vegan Stuffed Parantha
Food is one thing that makes me the happiest. It is like i am craving for a delicious meal right after finishing one!! 😅
My friends who know how much I eat cannot believe that being a vegan I can have zillions of options to eat. They would judge me if I ate even upma (a famous breakfast made of semolina), as it contains curd in it or question me how could I eat paratha, coz there’s ghee or butter in it! What everyone needs to understand is that every item is made from scratch and the ingredients and style of making can be tweaked as per requirement. That is why cooking at home is best and it’s even cheaper than being a non-vegan!
I am a roti eater (just like some people have rice as their staple food), so i crave for roti atleast once a day to satisfy my tastebud and tummy 😆
And so, I had made this stuffed paratha in hurry during one of my hunger prangs, as i knew that I could make this faster than any home delivery that day. Yes, it’s quick.
I used the veggies like capsicum, tomato, carrot which were available in my house and steamed them with lil onion, garlic, salt, pepper, cumin powder, coriander, pav bhaji masala and carom seeds. I used Ragi flour to make the dough for paratha and prepared the stuffed paratha on non stick pan without using any butter.
This is a simple tweak – using various colors of veggies, ragi flour instead of whole wheat or maida and not using any ghee, oil or butter can make so much difference. Removes guilt of having dairy or eating junk or not contributing to daily intake of greens n veggies. Yes, this is vegan and when served piping hot along with mint chutney and ketchup, it can make you forget your fav outside food. 💚🌱
